Jackie F's Reuben Casserole

I talked my next door neighbor into sharing her recipe for Reuben Casserole (“Hotdish” in Minnesotaspeak). Check it out!

Stuff Needed:

9 x 13” Baking Dish

8oz Medium Egg Noodles

8oz Deli Corned Beef

1 can 14oz Sauerkraut with Caroway Seeds (not drained)

2 Cups Shredded Swiss Cheese

¾ Cup Thousand Island Dressing

¾ Cup Milk

1 Tablespoon Yellow Mustard

2 Slices Pumpernickle Bread, Crumbled

2-3 Tablespoons Butter, Melted

Directions:

1. Cook and drain noodles

2. Cut corned beef into bite-sized pieces

3. Combine corned beef, sauerkraut, cheese and noodles in the casserole dish

4. Combine dressing, milk, and mustard and pour over noodle mixture

5. Combine bread with melted butter and sprinkle on top of casserole

6. Bake at 350° 45-55 minutes

This illustration (color & in Sepia) is perhaps the most complicated I've ever attempted and are the result of about twenty hours of work. Disassembled, they will be used as a backdrop for other illustrations, so the time involved will have been well spent. If you look carefully on the left edge you will see a covered bridge reflected in a stream.

The Horses Part 2: The gunslinger and his big Appaloosa Mare

He has no name...yet (The Port of Danger Bay, Minnesota Blog is accepting suggestions.

He came from Kansas in answer to an advertisement for a deputy town marshal position in the village of Grand Marais, Minnesota, circa 1873.
